I love creating new recipes and seeing our guests enjoy them on the terrace. I wanted to create a really summery recipe for you to enjoy in the upcoming months and this is what we did.

Fluffy Clouds Cocktail
You will need
For the main cocktail
- 50ml Tanqueray Gin
- 15ml Butterscotch
- 50ml Mint Juniper Infusion
- 0.5ml Sugar Syrup
- Lemon cream top
Mint & Juniper Infusion
- Handful of juniper berries
- 15-20 mint leaves
- 50ml sugar syrup
- 400ml boiling water
For the Lemon Cream
- 200ml egg white
- 50ml sugar syrup
- 50ml freshly squeezed lemon juice
Method
Mint and Juniper Infusion
- Gently mix the juniper berries into a tea pot top open up the flavour of them (do not smash).
- Add the mint leaves, sugar syrup and boiling water. Stir and cover the tea pot over night.
- Fine strain it out using a cloth and store in the fridge until you need it.
Lemon Cream
- In a bowl, whisk the egg whites until light and fluffy.
- Add the sugar syrup and lemon juice and carefully fold into the egg white mixture.
The Main Cocktail
- Pour all the ingredients into a cocktail shaker.
- Fill the shaker with ice and shake rigorously. Fine strain into a martini glass.
- Add the lemon cream on top and garnish with a lemon peel and mint sprig.
