The centrepiece this Valentine’s is a Hereford beef sirloin, designed to share. "There's something incredibly intimate about sharing food.” explains Dion, “When designing menus for a romantic - or actually any - special occasion, it’s important to consider the dining experience that comes with it. For Valentine’s, sharing courses are perfect to embrace connection.".

Dion and his team prioritise local and seasonal produce, celebrating the best of British, from cultured butter from nearby Cholmondeley, to Creedy Carver duck from Exeter. Importance is placed on sustainability, and using the finest cuts of meat to reflect the season and add freshness and excitement.
